Maranggi Satay: Soft Satay Without a High Taste

SATE MARANGGI is often found in West Java, especially Purwakarta. Maranggi satay is different from satay Madura in terms of the ingredients and the way it is served. Maranggi satay uses beef or mutton as its main ingredient, served with pickled tomato chili sauce, chili oncom, grilled sticky rice or timbel rice.

The striking difference between Sate Maranggi and other satays is the process of soaking the meat in the spices before being skewered and grilled. Because of this seasoning process, Sate Maranggi is served without accompanying sauce. The marinade itself is made from a combination of sweet soy sauce and several types of spices, such as ginger, coriander, galangal, turmeric, with a little vinegar to give it a slightly sour taste. Ingredients:
  1. 350 gr beef, cut into cubes
  2. 150 gr beef fat, cut into cubes
  3. 5 cloves of garlic
  4. 5 spring onions
  5. 1 tbsp coriander
  6. 1 tablespoon tamarind water
  7. Salt & brown sugar to taste
  8. 2 tbsp sweet soy sauce
  9. Papaya leaves for tender meat

Ingredients for soy sauce:
  1. 3 spring onions, sliced
  2. 1 tomato, sliced
  3. 10 pieces of cayenne pepper, sliced
  4. 5 tbsp sweet soy sauce
  5. 1 teaspoon lime juice / limo

How to make:
  • Squeeze the papaya leaves so that they are soft but not crushed, then wrap the meat and fat with papaya leaves, let stand 30 minutes.
  • Puree shallots, garlic, coriander, salt and brown sugar.
  • Mix the meat with ground spices, add soy sauce and tamarind water, stir well. Let stand 15 minutes, then stick with a skewer
  • Bake until cooked.

How to make soy sauce Sambal:
  • Combine all ingredients, stir.
  • Serve the satay with soy sauce.
