Catfish can be processed into various dishes, but Mother will give you a special recipe from PADANG, ASAM PADEH PATIN. The ingredients recipe and how to cook it, consider the following:
Ingredients:
- Catfish. 1 head / uk. moderate
- 2 pieces of chip acid
- 3 pieces of lime leaves
- 1 tomato fruit ptg2 (kps peel)
- Bay leaves 2 pcs
- 1 pcs of turmeric leaves
- Salt to taste
- Sugar to taste
- Lime juice
Ground spices:
- 10-15 pieces of red chilies
- 10 red onions
- 5 cloves of garlic
- 1 segment of galangal
- Ginger 1 segment
- 1/2 segment of turmeric
- 1 stg of lemongrass
- Candlenut 2 btr
How to make:
- Clean the fish, then cut it into pieces.
- Cover with a squeeze of lemon juice and add a pinch of salt.
- Let stand for about 5-10 minutes then rinse and drain
- Saute ground spices until fragrant, add lime leaves, turmeric leaves, bay leaves, tamarind chips and salt. Add water and tomatoes until the tomatoes are crushed
- After the water is boiling, add the catfish, stir and add sugar, reduce the heat.
- Let the sauce recede / thicken until the spices are absorbed, turn off the heat
- Done and ready to serve
