Ingredients for fish pepes:

  1. 1 kg of catfish
  2. 1 lime
  3. 1 teaspoon salt
  4. 4 tbsp tempoyak
  5. 1 stalk lemongrass 

Ground spices:

  1. 5 cloves of garlic
  2. 9 spring onions
  3. 5 candlenuts
  4. 4 cm of turmeric
  5. 2 cm ginger
  6. 1 tomato
  7. 8 red chilies
  8. 3 cm laos
  9. 1 teaspoon salt
  10. 1/2 teaspoon sugar
  11. Supplementary material:
  12. Basil and cayenne pepper
  13. Sufficiently banana leaves

How to make catfish pepes:

  • Clean the catfish from dirt, cut into pieces
  • Wash the catfish thoroughly, then add lime juice, add a little salt, let stand 15 minutes.
  • Saute all ground spices and lemongrass with a little oil until fragrant.
  • Then add salt and sugar and add the tempoyak, taste it then remove the marinade. Cover the fish with basil leaves and cayenne pepper.
  • Wrap it, pin the tip of the banana leaf with a toothpick.
  • Steam for about 30 minutes or until cooked.
  • Then burn briefly over hot coals / or on Teflon.
